March is National Nutrition Month

Hey you guys, it's National Nutrition Month!

This is the month to try out something new to taste. Chef Yum Tum loves to try new foods, even funny looking ones because food is an adventure, but did you also know that eating new foods are healthy? So, when you try a new food, you're also feeding your body new vitamins and minerals that it's never had before. Exciting. So, Chef Yum Tum found you a very special certificate where you can write down the things you try to eat that are good for your body.

Today Chef Yum Tum tried dog food! Ha. And she reports that it tastes terrible.
"Dogs know nothing about good food!" (But we know that dogs like good food too)
So she's going to try something else, like radishes.

Nigerian Groundnut Soup

Chef Yum Tum made a call to her good friend Akingbogun (A-king-bo-gun), who lives in the ancient city of Kano in the African country of Nigeria. He had a family recipe he helped to cook with his mother when he was young. Groundnut Soup. Traditionally this soup is made with ground peanuts or peanut butter, but you can also use cashew or almond butter. Vegetarian kids can make this too! It's a great soup if you don't like to eat meat. And still great if you do.

Groundnut Soup

Nigeria

Serves 4

INGREDIENTS:

1 Large Tomato
1 Large Potato
1 Medium Onion
2 cans of beef broth (or vegetable broth if you prefer)
1 teaspoon of salt
1 teaspoon sugar or honey
1/2 Cup nut butter: peanut, cashew, almond, or your favorite
1/2 Cup of Milk (or Coconut Milk)
2 Tablespoons Rice

EQUIPMENT:
veggie peeler, paring knife (a small sharp knife), large soup or saucepan, measuring cups and spoons, mixing bowl and spoon

HOW TO MAKE:

  1. Peel the potato and onion
  2. Cut or dice the potato, onion and tomatoes into small pieces.
  3. Put the veggies in your pan with the beef broth and turn up the heat. When it begins to boil, turn the heat down to Medium Low. Cover the pot and cook for 30 minutes. Stir once.
  4. While it's cooking, mix the nut butter with the, milk, rice, salt, and sugar in a bowl till it looks pretty smooth. Could take 5 minutes of stirring, or more.
  5.  Then add the nut paste to your broth. Stir well with a spoon!
  6. Lower the heat and cook 30 more minutes.
  7. When you serve your soup you can garnish, or decorate the top of your soup with crushed nuts, parsley, cilantro, or a little yogurt before serving to your guests.
Serve with rice. And Akingbogun likes to eat melon with his bowl of soup.
You choose what sounds good to you.
